With the last few moments of summer lingering and just a few weeks till school is back in session, I thought that I would post something by way of a last go at enjoying summer!
So, it can’t always be about the kids (though they always have to be taken into consideration) so here are a few more grownup ideas for you to accompany all the fun things you will be doing with the kids!
When I think about summer, I think about family and friends, picnics in the park, tiffin boxes and picnic hampers overflowing with delicious food, the smell of barbeques and the sounds of kids laughing and playing all around. Here is my idea of a fantastic way to pass a sultry summers day…
Posh Picnic in the Park (or in your back yard if you prefer)
Get a list of friends together and a list of items for the picnic and divvy it up amongst those friends for a fantastic fancy shared family picnic. Here are a few items to think about including.
Make sure you pack all the picnic essentials like something to sit on, something to eat off and something to eat with… and of course, something to eat and drink! Sunscreen, hats, shade, games (hoola hoops, frisbee’s, balls, bean bags, bubbles, croquet set and so on for the kids), bug repellant, torches or lanterns if you plan to stay out late, and something warm to wrap up in as the sun goes down.
Make your own gourmet lemonade party by Cheeky Kitchen… Both adults and kids will love this as you get to choose your own flavours, it is healthy and refreshing and just that little bit special.
The following recipes come from a favourite source namely Delicious Magazine. I think these are all great for a picnic, just depends on what you are in the mood for 🙂
Another thirst quencher that’s a little bit special – Watermelon and Strawberry Crush
Or if you fancy something for adults only then how about Peach and Raspberry Champaign Cocktail…
This is the kind of picnic that is going to last for many hours so a few nibbles will never go amiss. Keep them healthy and light so that there is still room for all the other lovely eats though 😉 How about Cumin and butter bean humus, paprika pita crisps and mixed salad recipe
or how about Cheese and Mustard Scones… can serve with sliced cold meats and cheeses and a mixed salad or crudities…
These Spring Herb Tartlets are sure to tickle your tastebuds warm or cold and everyone gets their own..
A simple sandwich goes a long way to filling a gap and is really easy for a picnic, so how about poshing things up a bit with these Smoked Chicken, Parsley Pesto and Crisp Gem Lettuce Sandwiches. Anyway, there’s a lot to be said for presentation…
Or if you prefer… Try a Smoked Salmon, Cream Cheese and Cucumber Picnic Loaf for something equally easy and delicious 😉
If you can manage a barbecue for the picnic then how about these Moroccan Lamb Burgers with Tomatoes, Humus and Pitas… If you can’t take the barbecue to the picnic or can’t be bothered with the hassle then these still work cooked at home in advance and wrapped up to keep from drying out.
Or if you prefer chicken, then try these Best Ever Tandoori Chicken Bites
Or even Chicken and Prawn Skewers on a Summer Greek Salad for something light and delicious
Now of course, you cannot ignore dessert! So here are some easy and delicious dessert options to include.
They are light, sweet, delicious and tempting. They are Lemon Meringue Pies with a hint of Orange…
Another option if an Apricot Buttermilk Cake…
Of course, you can never go wrong with a summer fruit salad and cream or plain yoghurt!
Right now I need to step away from the computer from all the dreaming and drooling going on 🙂 I hope that I have given you something to think about to turn just a simple picnic into something even more special for everyone. Enjoy the sunshine and summer breezes.
Lots of love x
